Thyme honey is produced by the Soukas family at Lefkada. It is considered a honey of superior quality.
It belongs to the blossom honeys, but in reality it is a category of its own due to the intense aromatic and taste characteristics.
Its production rises to the 10% of the overall honey production in Greece.

They are produced according to the traditional art of delight making with syrup and starch and they are flavored with rose water, ouzo, limoncello or kumquat.
