This is probably the most common type of honey, but it is the rarest of them as well. This is due to the fact that it is composed by nectar of flowers that bloom during a particular time in one specific place, and that makes it practically impossible to reproduce as such from year to year.
Quite often there can be a dominant nectar or a specific flora mixture that gives it a recognizable taste. This year, in Emmelia blossom honey, you can distinguish the taste of wild cotton, wicker and thyme.
Its color and taste differs due to the differentiation of the nectars present. Blossom honey typically crystallizes about 3 months after production.
